GST Swamp Dust Bloody Mary

The Bloody Mary is brunch's whole personality, and at Greer Southern Table it's a house institution — a tomato mix made the night before, built tall, and garnished like a meal. The Swamp Dust rim is the SGP move: a Cajun edge on the very first sip. Pair with Swamp Dust · Serves 1 (mix makes 8) · Mix ahead 24 hrs.

Ingredients

  • House mix (makes ~1 quart): 32 oz tomato juice
  • 2 Tbsp prepared horseradish
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp hot sauce
  • 1 oz fresh lemon juice
  • 1 tsp celery salt
  • 1 tsp black pepper
  • 1 tsp Swamp Dust
  • 2 Tbsp pickle brine
  • Per drink: 2 oz vodka; 4 oz house mix; ice; Swamp Dust for the rim
  • Garnish: pickled okra, a smoked olive, celery stalk, lemon wedge, and a boiled peanut

Directions

    Make the mix (night before). Whisk all house-mix ingredients together; cover and refrigerate overnight — the flavor deepens dramatically after 24 hours.

    Rim the glass. Run a lemon wedge around a pint glass rim and dip in Swamp Dust.

    Build. Fill with ice, pour the vodka, add 4 oz house mix; stir gently from the bottom, four or five slow turns.

    Garnish big. Pickled okra, olive, celery, lemon, and a boiled peanut. Serve with a straw.
